Second Course
Spinach Salad
Fresh baby spinach tossed with a marionberry-rieling vinaigrette with slices of bosc pear, candied walnuts and crumbles of blue cheese.
Main Course- Entree
Cantonese Salmon
A pan-seared filet of salmon over a bed of wasabi mashed potatoes and topped with Chinese creamed spinach.
Tuna Del Cabo
A pepper crusted filet of yellow fin tuna seared to medium rare and topped with tequila citrus salsa, set over steamed rice and surrounded by sauteed vegetables.
Mojo Pork
Tender bits of braised pork shoulder in a tropical coconut-white wine sauce and lemon-cumin saut�ed green beans over a bed of herbed rice.
Steak a la Francais
Lean strips of beef sirloin in a red wine-demi sauce over garlic mashed potatoes with brussel sprouts blanched with sea salt.
